Varvary (8A Strastnoy Blvd., Moscow) – this gourmet restaurant, launched by chef (and one-time geophysicist) Anatoly Komm, serves dishes that can only be described as “neo-Russian” – transforming traditional Russian foods into new culinary creations. To make this a reality, he uses experimental “molecular” cuisine – investigating the science behind food preparation. What this means for visitors is be prepared for a large bill at the end of the meal. No doubt, “Varvary”, which is Russian for “barbarian” (a play on the perceptions of Russians to Western Europeans and others), generated some good publicity when it was named among the world’s top 50 restaurants.
