De Karmeleit (Langestraat 19, Brugge) – located within an 18th century house, this is one of Brugge’s finer restaurants. Its chef Geert Van Hecke has earned three Michelin stars for his impeccable meals. Typical dishes served here include the dover sole with Zebrugge shrimps, Hare Harlequin (rabbit) with legs stuffed (with goose liver royale), roasted pheasant with black truffles, baked goose liver, and caramelized cauliflower.
